Jane is originally from Skive, Denmark and came to the USA as an au pair. She received a degree in biotechnology from Århus University before returning to the USA where she earned a Ph. D. in biochemistry from Georgia Tech.

Jane has been making candy since childhood, but ultimately this tradition grew into a passionate hobby, and then an interest in making artisanal chocolates. She has studied with New York's Institute of Culinary Education, Vancouver's École du Chocolat, and Valrhona's École du Grand Chocolate in France. Her interest in chocolate consumed whatever time her two young sons and husband left her.

In 2009 she took the plunge to end her scientific career and quit her day job as the head of the department of protein and analytical sciences in a small biotech company in Cambridge, MA to be a full time chocolatier. With the help and support of her husband established 'fine chokolader'.
